Slow Cooker Garlic Buffalo Chicken

This slow cooker meal is what I make when I’m craving cheesy, calorie laden buffalo chicken dip, but am (for whatever reason) trying to be a better human that week. It’s still packed with flavor, super easy to make, light on calories, and really hits the spot. Serve it on a bun, on a homemade pizza, over a salad, or on whatever really, you can’t go wrong.

Ingredients

  • 3 boneless skinless chicken breasts

  • 2 cups of cayenne hot sauce (I use Frank’s)

  • 4 cloves of garlic minced

  • 2 tsp salt

  • 2 tsp black pepper

  • 2 tsp paprika

  • 2 tsp onion powder

  • 1 tsp garlic powder

  • 2 tsp dried parsley

  • 1 tbsp dried oregano

Directions

  • Mix hot sauce and minced garlic together and set aside.
  • Mix spices together in a small bowl and set aside.
  • Pat chicken breasts dry, drizzle with olive oil, rub chicken breasts generously with spice mix, and rest in the bottom of the slow cooker.
  • Pour hot sauce and garlic mixture over chicken breasts, cover, and cook on high for 4 hours (Note: my slow cookers runs very hot, so I always check mine after about 3 hours to make sure it doesn’t over cook)
  • Take chicken breasts out and shred on a cutting board. Add back to the slow cooker, mix with remaining sauce, and enjoy!
