I love this recipe because it takes zero time to throw together, feeds a crowd, and is relatively healthyish. It’s great on a sandwich with slaw, in a salad, on its own with some sides, and freezes really well too. You can use any sauce you like, but I usually use a sweeter tomato based sauce like Sweet Baby Ray’s or something similar. The last time I made a batch, I used a porter chipotle BBQ sauce from a gourmet shop in Williamsburg, VA (shoutout Wythe Candy and Gourmet Shop) that really kicked the recipe up a notch, so have fun with it and mix it up from time to time!
Slow Cooker BBQ Chicken

4 boneless skinless chicken breasts
2 cups BBQ sauce
1 yellow or vidalia onion sliced
2 cloves garlic minced
2 tsp salt
2 tsp black pepper
2 tsp onion powder
1 tsp garlic powder
1 tsp paprika
2 tsp worcestershire sauce
Directions
- Mix BBQ sauce, minced garlic, and worcestershire sauce together in a small bowl and set aside
- Mix spices together and set aside
- Lay sliced onions down in the bottom of the slow cooker
- Pat chicken breasts dry, drizzle with olive oil, rub chicken breasts generously with spice mix, and rest in the bottom of the slow cooker on top of the onions.
- Pour BBQ sauce mixture over chicken breasts, cover, and cook on high for 4 hours (Note: my slow cookers runs very hot, so I always check mine after about 3 hours to make sure it doesn’t over cook)
- Take chicken breasts out and shred on a cutting board. Add back to the slow cooker, mix with remaining sauce and onions, and enjoy!
